Gianfrancesco Cutelli behind the counter of the Gelateria dei Coltelli of which he is the owner; the name is in honor of a historical figure in the world of ice cream making, the Sicilian Procopio dei Coltelli, who brought ice cream to France at the court of the Sun King (Louis 14th 1643-1715), being also a native of Sicily like the other master ice cream maker declares a presumed lineage that is not documented but hypothesized by the similarity of the surnames. He has won a couple of international ice cream competitions and is in all the guides including the prestigious Gambero Rosso
He liked the idea of importing granitas and making ice cream in Pisa.
