Michele Mattei from Livorno, born in 1971 in his laboratory in via San Martino. he calls himself "Tortaio" or "Cecinaio" referring to how his particular profession is defined both in Pisa and Livorno. He uses the baking tray and the electric oven for reasons of hygiene and cleanliness. The wood-fired oven, he claims, is just nostalgia.
