The "pani ca meusa" is a traditional Palermitan sandwich made with spleen, lung and sometimes veal trachea. It's been a bit of the fashion of Palermo's street food, but they are not very common but some vendors are still present with their typical pots, such as Rocky Basile, "the king of Vucciria".
